It started, as many things do, in a Brooklyn coffee shop no bigger than a walk-in closet. A barista named June Park experimented one slow Tuesday with a dusting of white miso and a cloud of cold foam over an iced espresso. Customers began posting the drink to TikTok. Within weeks, the "miso latte" was everywhere.

Now, eight months later, it has spread to independent cafes in at least 34 American cities.
